Charlopin continues to practice a whoppingly long 10-day cold maceration. This has resulted in deeply colored 1991s which are solid, concentrated, well-made wines, but lack the complexity and intensity to warrant outstanding ratings. The most backward wine of this trio is the 1991 Chambertin, which reveals a tight but promising nose of coffee, herbs, cedar, and black fruits. Medium-bodied, with excellent ripeness and richness, it is unevolved and in need of at least 3-4 years of cellaring. Drink it over the next 12-15 years.
