The 2015 Sensibility is made up of 96% Grenache and 4% Syrah from the Paderewski and Catapult vineyards, harvested September 10-22, made with 23% whole clusters and aged 18 months in concrete eggs and neutral French puncheons. According to winemaker Jordan Fiorentini, the mild and cool spring of 2015 led to a very small crop, although August was hot. "What happens earlier in the season is really important, and you forget about that when it gets hot outside," she observes. It has a broody yet elegant expression, with singular aromas of saline, graphite, cigars and earth-laced cherry fruit.
