Disgorged December, 2011, the 2007 Gran Reserva Brut Nature is a blend of 60% Parellada, 20% Macabeo and 20% Pinot Noir (the latter from a Champagne clone.) It has an elegant bouquet with touches of brioche and baked bread that is not terrifically complex, but well-defined. The palate is taut and understated on the entry with crisp acidity and a twist of bitter lemon on the finish. It is a fine Cava, though I would like a little more persistency. Drink now.
Can Feixes's Cavas are founded upon Parellada and they produce only Gran Reservas, either Brut or Brut Nature with no more than 7-8 grams/litre residual sugar.
