The 2005 Cabernet Sauvignon possesses an opaque inky/purple color, and a gorgeous nose of graphite, creme de cassis, cedar, and new oak. When I smelled and tasted this majestic wine, it reminded me of the 2006 Mouton Rothschild. As strange as that might sound, there is more to that comparison than one might suspect. This rich, intense effort displays Cabernet Sauvignon’s potential when planted on the west side of Paso Robles. This gorgeous Cabernet can compete with the finest Napa Valley cult wines, but it requires 3-4 years of cellaring. It should keep for 2-3 decades. Bravo!
