The serious 1997 Cuvee El Palomar (equal parts Cabernet Sauvignon and Tempranillo from a chalky, hillside vineyard) is Bordeaux-like with its notes of dried Provencal herbs intermixed with smoke, cedar, red and black currants. After spending 16 months in French oak barrels, it was bottled unfiltered. The wine reveals good softness, plenty of spice, attractive red and black fruits, medium body, and excellent symmetry and harmony between all of its elements. Drink it over the next 5-8 years.
