The lineup begins with the 2008 Rosat Trepat with its lovely rose petal and cherry blossom aromas. Crisp, savory, and just off-dry on the palate, it will drink nicely over the next 12-18 months. Agusti Torello Mata has a reputation as one of Spain’s foremost Cava producers and my visit in January 2011 did nothing to disprove it. The stated goal is “to make Cava with soul” working with only the traditional grapes. All of the fruit utilized is at least 30 years of age. The 2006 Rosat-Trepat Reserva Brut was sourced from Trepat vines over 65 years of age. Deep pink in color, it has a lovely bouquet of rose petals, strawberry, and raspberry. It reveals a steady stream of small, persistent bubbles, a crisp, refreshing mid-palate, and outstanding depth of flavor.
