The 2019 Ones Cabernet Sauvignon is a stunning, complete wine even at this early stage. Deep ruby-purple, it's surprisingly bright and pure on the nose, with classic red cherries, dried herbs and savory spices, gaining more nuance of blueberries and dried flowers as it sits in the glass. The palate is layered with fresh fruits, spices, herbs and floral perfume, knit by an abundance of silt-like tannins, and it finishes with tremendous lift and length. It's exceptional within the Booker portfolio itself, and in the context of Paso Robles.

A barrel sample of 100% Cabernet Sauvignon aging in 100% new French oak, the deep ruby-black colored 2018 Ones Cabernet Sauvignon has youthfully bombastic scents of crème de cassis, kirsch, bitter chocolate, mint leaves, coffee bean, dried thyme and lavender with a classy frame of sweet spices. The silky, full-bodied palate is very intense and layered, with firm, grainy tannins and fantastic freshness, finishing long and layered. About 50 cases will be made.

Deep ruby-purple, the 2017 Ones Cabernet Sauvignon represents the best from each vintage, "a cherry-picking of the best barrels," says Eric Jensen. It has a layered nose: crème de cassis, cherry jam and blue fruit hints are accented by cigar wrapper, cedar, graphite and violets plus hints of Indian spices. It's full-bodied and explosive with spicy, ripe fruit layers in a velvety frame, lifted and fresh with a long, layered finish. This is gorgeous! Around 150 cases were made.

Deep ruby-purple, the 2016 Ones Cabernet Sauvignon offers cassis, grilled meats, baked black cherries, leather, Chinese five spice and notes of cedar and graphite on the nose. The medium-bodied palate is packed to the gills with ripe, dark fruits, firmly framed and finely grainy with a long, dense finish. This still needs at least another 2-3 years in bottle.

Deep garnet-purple colored, the 2015 The Ones Cabernet Sauvignon, made from 100% Cabernet Sauvignon, opens with intense, pure black currants and blackberry notes with suggestions of cedar box, pencil lead, Chinese five spice, menthol and hints of dark chocolate and bay leaves. Medium to full-bodied with beautiful, tight-knit, very pure, crunchy black fruit flavors, it has a lovely firm backbone of ripe tannins and plenty of freshness, finishing with great length. Forget this one for two to three years and drink it over the next 25+.
