You're going to get such a kick out of this wine and out of the super food-friendly Pecorino grape in general. The Talamonti 2017 Pecorino Trabocchetto would pair with just about any seafood or white meat, but in this case, I'm thinking chicken breasts with a peppery cream sauce and capers on a bed of rice pilaf. The fruit comes from a 5.5-hectare parcel, and the winemaking is very simple, with cold soaking on the skins and brief aging in stainless steel. The results are crisp and luminous with Meyer lemon, blanched almond and a savory touch of wild sage and saffron. Some 60,000 bottles were released.
