The 2019 Salix is a new white blend of 67% Garnacha Blanca, 18% Macabeo and 15% Pedro Ximénez that fermented in new French oak barrels, where it matured with the fine lees for three months. It's young and delicate, with the fine smoke and spices from the oak but, other than that, has a profile that is not that far from that of the Murmuri, their other white. The palate is balanced and has a soft texture and good freshness (but not lots of acidity), reflecting a warm Mediterranean vintage. 1,800 bottles were filled in January 2020.
