The 2021 Rosato Heathcote is a blend of Aglianico, Nero d'Avola and Sagrantino. The fruit was all handpicked, fermented wild and fermented in a variety of vessels: Aglianico in chestnut botte and old barriques, the Sagrantino and Nero d'Avola in stainless steel. Aging included six months on lees with no added acids. A very pale flamingo blush in the glass, this is good! Savory and spicy, with blood orange, saffron, a hint of star anise, red summer berries and a mineral texture in the mouth. The chalky texture through the finish is a bonus. This is drinking well for a two-year-old rosé, which suggests it has a little way to go—unusual for a rosé.
