Vintage after vintage there is the same rig-orous grape selection and the same scru-pulous viniflcation process that eschews all chaptalization-a degree of care rarely seen in Sauternes. The wines are rich and natural but sometimes slightly heavy, a penalty often paid by producers who dare to use the least sulfur dioxide possible.
