From a south/southeast-facing parcel that's farmed organically, the 2020 Chablis Les Truffières, an exclusivity of importer Kermit Lynch, offers up aromas of yellow orchard fruit, clear honey, dried white flowers and oyster shell. Medium to full-bodied, ample and satiny, with bright acids and a saline finish, it's a very strong effort from Romain Collet.

The 2017 Chablis Les Truffières was bottled in November 2018, seeing a long maturation in stainless steel. Revealing notes of peach, ripe citrus fruits, white flowers and acacia honey, it's medium to full-bodied, fleshy and textural, with good concentration and a gourmand, generous profile that exemplifies the style Collet is pursuing. This derives from a south/southeast-facing parcel that's farmed organically.

The 2016 Chablis Les Truffières is a rich, unctuous wine, wafting from the glass with notions of honey and spiced peaches. On the palate, it's medium to full-bodied, fat and textural—bordering on cloying—with a saline, sapid finish. Romain Collet assured me there was no botrytis influence this year, but the wine is certainly gourmand and exotic. It's not for the fainthearted.
