This is a fascinating Lot 30 La Bota de Manzanilla Pasada that originates from Rafael Rivas’s 15-butt Solera that he started in 1986. They were topped up as little as every two years and refilled courtesy of the finest Solera at La Guita. Unusually the butts were filled almost to the top instead of the usual 5/6 to inhibit the flor. There have been previous releases from these butts (Lot 10 and Lot 20), and this third release is just wonderful. It has a nuanced, understated nose of almond and Turkish Delight that is joined by waxy, yeasty aromas with aeration, although they remain in the wings rather than taking center stage. The palate has a fresh, live-wire entry with potent sour lemon and strong walnut aromas. It is nicely focused with great harmony and length on the finish. Excellent.
