Possessing a deep garnet-purple color, the 2007 Redbrook Cabernet Sauvignon is a little mute giving subtle aromas of warm blackberry, vanilla, chocolate and spice. The medium to full bodied palate is well structured with a backbone of high acidity and medium to firm, very finely grained tannins. It has a long, dark berry fruit finish. Approachable now, it should cellar to 2020.
Moving into the ‘The Reserve’ level wines, consumers should note that the ‘Reserve’ label is being replaced from 2007 with the ‘Redbrook’ label, which was the original label for this estate. No Shiraz was produced under ‘The Reserve’ label in 2006 as the vintage was deemed too cool to produce the quality necessary for Evans & Tate. Similarly, in 2007 no Redbrook Chardonnay was made as the vintage was considered too warm. About 480 to 500 cases of The Reserve / Redbrook Chardonnay are normally produced each year. No malo-lactic is performed on the Chardonnays. High solids are employed during fermentation along with natural yeast, lees stirring and some larger format oak (puncheons) are being experimented with. About 45% new oak is used.
