The 2020 El Pedrosal, which is sold under the brand Cepa Gavilán, wants to be a balanced, fresh and Atlantic red produced with Tinto Fino. It matured in barrel for 12 months and has 14.5% alcohol and good acidity and freshness. The wine introduces the serious and classical wine style with ripeness, austerity and balance with typical rusticity and unusual elegance, a medium to full-bodied palate and fine tannins. 220,000 bottles produced. It was bottled in January 2022.

The Crianza 2018 El Pedrosal, also sold as Cepa Gavilán, is the youngest and more modern offering from the winery. In 2018, it shows very integrated oak and a juicy personality, ripe and balanced, with a soft texture and mellow flavors, very recognizable as Ribera del Duero with a chalky finish. 240,000 bottles produced, almost half of their production.

The 2017 El Pedrosal, also sold in some markets under the brand Cepa Gavilán, has a nose of smoky bacon and sweet spices, quite attractive and showy. The palate is a little more challenging, with concentration and plenty of tannin and a warm finish, reflecting a small crop in a warm and dry vintage marked by spring frost. 140,000 bottles produced. It was bottled in February 2019.

The textbook 2016 El Pedrosal was cropped from a cooler year that perfectly fit the house style and their preference for harvesting early to keep good acidity in their wines, which makes them fresh and long-lived. However, in 2016 the harvest started later, as the grapes ripened slowly and perfectly. This wine has the balance between ripeness and freshness, power and elegance, with a spicy touch from the oak that is not intrusive. Great freshness, one of the best vintages for this entry-level red from the Pérez Pascuas family. 180,000 bottles produced. It was bottled in January 2018.
