The 2005 Torami reveals a flavor profile that tends towards a wilder expression of game, dark cherries, earthiness, smoke. The tannins could use a little more polish, but bottle age should do the trick here. Torami is 50% Cabernet Sauvignon, 40% Sangiovese and 10% Montepulciano that spent 10 months in French oak. Anticipated maturity: 2010-2015.
