The 2012 Brut Nature, which has no dosage whatsoever, is a blend of 40% Macabeo, 30% Parellada, 20% Chardonnay and 10% Xarello, all organically grown in clay and limestone soils. It spent 18 months on its lees. Notes of apple skin, crisp citrus (grapefruit), and fresh, lively effervescence are found in this light-bodied, fresh, interesting sparkler. Enjoy it over the next year or so.

The totally dry, no dosage, frothy 2011 Brut Nature reveals hints of oranges, tangerines and honeyed citrus, well-defined, small bubbles and an austere, dry, chalky mouthfeel. It is an outstanding, inexpensive sparkling wine made from a blend of 40% Macabeo, 30% Parellada, 20% Chardonnay and 10% Xarello. It should provide plenty of pleasure over the next year. Naveran is one of my favorite Spanish producers from Cava, and both of these cuvees will satisfy the most demanding sparkling wine expert.
