The nearly extinct Caino grape is characterized as light in color, low in alcohol, and high in acidity. The wine was aged for 12 months in 5-year-old French oak. Pepper, herbs, olives, pomegranate, and boysenberry aromas inform the nose of a lean, elegant, racy wine that bears a passing resemblance to a high quality Cabernet Franc from the Loire Valley.
