The 2006 “Paternus” Cabernet Sauvignon (60%) – Shiraz (40%) was aged in French oak, 50% new for 15 months. My note is from a barrel sample but by the time readers see it, the wine will be in bottle. It is a saturated purple with aromas of pain grille, spice box, black cherry, and blueberry. This leads to a full-bodied wine which is currently quite tannic and firm with an attenuated finish. The raw materials are present but the wine requires another look after bottling. The 70 acre Ulithorne vineyard, owned by Sam Harrison and Rose Kentish, is 36 years old in what should be its prime of life.
