Composed mainly of Chardonnay with just a touch of Pinot Noir (5.3%), the 2005 Yarra Burn Blanc de Blancs has a toasty, slightly honeyed nose with underlying notes of green apples, under-ripe peaches and white blossoms. Medium bodied with a good amount of small to medium sized bubbles, it has medium-high acid and balancing dosage (11.7 grams per liter of residual sugar), finishing with lingering toast and apple flavors.
