With predictable sharpness of citrus and stone, Boillot's convincingly sappy 2006 Saint-Romain also displays apple pit and peach kernel bitterness, mint-like herbal high notes, and fresh lime that drives an invigorating, subtly saline finish. Two or three years in bottle might even bring more interest.
