The 2010 Chevalier-Montrachet Grand Cru needs some time in the glass to open up, unfurling to reveal youthful aromas of lemon oil, lime zest, pastry cream and toasted almonds, framed by light reduction. On the palate, the wine is full-bodied, multidimensional and utterly complete, with extraordinary depth and length. This Chevalier's chewy extract and chalky structure are hard to describe, but suffice it to say the impression evokes the notion of liquid rock. There's such tension, energy and concentration here that considerable longevity seems a given. Anyone fortunate enough to have bottles resting in their cellar should forget them for a decade.
