The 1996 Cabernet Sauvignon Unfiltered exhibits an opaque purple color, as well as a robust, nearly massive constitution, a boat load of tannin, and considerable power, depth, and muscle. Atypically rugged and brawny for a Newton Cabernet Sauvignon, it should age effortlessly for 2-3 decades. Prospective purchasers should be aware that this vintage will require 4-6 years of cellaring for some of the tannin to melt away.
Newton's Cabernets cut a broader, more textured mouth-feel than the Merlots
All of the Newton wines are fermented with natural yeasts in order to obtain more complex aromatics. The malolactic fermentations take place in barrel to promote greater integration of wood, and to encourage more textural richness in the wines. All of the wines, including the Chardonnay, are bottled without filtration.
