Collet's 1989 Chablis-Valmur is the quintessential example of a profound Chablis. It displays that unmistakable mineral, flinty, smoky smell, backed up by fabulously concentrated, high extract flavors buttressed by zinging amounts of acidity. The finish is a blockbuster. But keep in mind, this wine is still an infant in terms of development. Drink it over the next 10-12 years.Collet is probably the least known of the top Chablis producers. Most of his wines are sold to France's greatest restaurants, making the tiny quantities that reach America's shores almost impossible to find.
