The fruit for this 2021 Adelaide Hills Chardonnay was sourced from Kaipo (340 meters in elevation). Composed of three different clones, the wine is both linear and taut in its acid and fruit profiles. This is delicate, lacy and fine. Lovely, quiet. It was fermented in French oak (20% new) and matured for eight to 10 months, depending on the parcel/vintage, with batonnage every couple of weeks to build texture. This is the barrel selection rather than the entire production. Very pure.
