While cold settling of free-run juice followed by a cool ferment in stainless steel is standard stuff, titratable acidity of 7.6g/l set against 5.4g/l of residual sugar isn't common in temperate regions such as the Eden Valley. Pale, gleaming green-straw; miraculously, the acidity is more than balanced by luscious Bickfords lime juice flavours. Classic drink now or later

Light straw colour and pungent, intense floral aroma recalling jasmine flowers. It's only just been bottled but the aroma is extraordinary. It's tight and delicate in the mouth, intense and refined, fragrant and lovely, The palate has softness and frutiness, with good acidity which is not obvious, plus a little sweetness (under 5g/l) which will not be apparent to most drinkers. Result: excellent drinkability

This is classic Eden Valley Riesling with all you could ask for by way of ripe limes and apples and bath powder, all perfectly balanced on a fine, long acid backbone. Given the lean 12% alcohol, I was surprised by the depth of aromas and flavour until I checked the specs and found 5.4 g of residual sugar. It's not enough to taste, but just enough to take the bone out of bone-dry. This is the best 2014 Riesling I've tasted from South Australia, and it avoids the short finish. I rarely give a wine 95 points but this wine deserves it. The wine gets similar scores from Messrs Halliday, Shanahan and Keys
