The 1997 Chassagne-Montrachet 1er Cru Morgeot is showing beautifully, blossoming in the glass with a deep and complex bouquet of honeycomb, drawn butter, yellow apple, pastry cream and lemon confit, with subtle hints of iodine and wheat toast on the upper-register. Medium to full-bodied, textural and enveloping, it's build around muscular structuring extract and lively acids. Oxygen is the wine's friend, and it developed immensely positively over a few hours.
