The 2007 Xarel-lo was sourced from a 50-year-old vineyard and barrel-fermented in 300-liter French oak where it remained for four months with batonnage. The wine did not go through malolactic fermentation. Medium straw-colored, it offers up an excellent bouquet of baking spices, toasty oak, and assorted white fruits. On the palate it is creamy textured, dry and elegant with notes of banana, lemon-lime, and white peach making an appearance. The oak is nicely integrated, the finish long and fruit-filled. It would pair well with creamy cheeses and flaky fish courses.
