The 2008 Franciacorta Pas Dose (100% Chardonnay with one forth in barrique and the rest in stainless steel) delivers warm tones of baked bread and sweet brioche with ripe apricot and peach at the back. There’s a very pleasing fullness here, with noticeable flavors of cinnamon and allspice that culminate with surprising structure and firmness. This is a big and bold side of Franciacorta. The bottle was disgorged in the summer of 2012. Drink: 2014-2018.
This family-run winery was started by father and son team Gian Paolo and Giovanni Cavalleri back in 1979 with a small production of just 6,000 bottles. Maintaining its petite, family-run framework, the winery sources fruit from two dozen specific vineyard sites surrounding the town of Erbusco at the heart of Franciacorta. The house style, based primarily on Chardonnay, shows very fruit-forward wines laced with baking spice and cinnamon.
