All of Chapoutier's 1996 white wines were made from small yields, and all possess more acidity than normal, but they are generally dominated by their respective terroirs. The 1996 Les Matines rose from Chapoutier's new estate in the Coteaux d'Aix en Provence is a crisp, tasty, Syrah-based wine with a touch of Grenache. It is a fresh, tangy, pleasant rose with unusually high acidity. Drink it over the next year.
