The Comm. G.B. Burlotto 2021 Langhe Sauvignon Dives comes from a 1.5-hectare site with chalky, bluish marl Sant'Agata soils at 500 meters in elevation that reinforces freshness and fragrance in the grapes. It ferments in oak and ages on the lees until late June the following year. Obtaining correct fruit maturity is key because vintner Fabio Alessandria does not like excessively green or tropical tones. He seeks freshness and minerality over a lean but texturally interesting mouthfeel. The 2020 vintage saw hail in this site, and after this edition, Fabio Alessandria says he is especially excited about 2022. Production is 3,500 bottles.
