The 2007 Cabernet Sauvignon flows across the palate with layers of plump dark red fruit, sweet oak, roasted coffee beans. It is a pretty, medium-bodied red to enjoy over the next few years. Sweet flowers and grilled herbs add complexity and nuance on the finish. Anticipated maturity: 2012-2017. Grassini is located in Happy Canyon, one of the warmer microclimates in the Santa Ynez Valley and one of the few spots in Santa Barbara County with conditions that are suitable for Bordeaux varieties.
