The 2015 Saint Aubin Cuvée de Paradis, a blend of small parcels of vines in Les Frionnes and Sentier de Clous, is the only red completely de-stemmed; it has a pretty crushed strawberry-scented bouquet. The palate is medium-bodied with a crisp entry, a little angular at the moment, but fresh and lively with brittle red berry fruit on the finish. As Olivier Lamy himself commented - it is a perfect restaurant wine.
