Devaux makes a yeasty, bubbly, straight-ahead style of Champagne. It’s tart and tastes mostly of green apples, with just a faint hint of toast in the finish. There’s nothing particularly distinctive here, but it is well-made, refreshing and crisp through a clean finish. ——W.E.(6/1/2001)—— 87
