The 2009 Sancti Victoria Sancti Jacobi is a Cava from the DO of Arabako Txakolina, in short, a Sparkling Txakoli. Made from 100% Hondarribi Zuri, one of the basic Txakoli grapes, it spent 12 months on the lees with no dosage. Lovely minerals and white fruits appear in this frothy, crisp, dry sparkling wine. This savory effort is a wonderful match for raw oysters and other Basque-country seafood. A slight narrowness on the palate kept it from an outstanding rating.
Most of Spain’s Cavas come from Penedes or more generally from the Catalunya DO. These are covered in my Focus on Catalunya report but there are a handful of other regions throughout the country that are entitled to the Cava designation.
