Cinnabar did not make a 1991 Cabernet Sauvignon from their estate vineyard, but the 1992 and 1990, both from the estate's Saratoga vineyard, are both impressive wines. The more restrained and classical 1992 Cabernet Sauvignon does not possess the same (perhaps controversial) abundance of coffee, chocolate, woodsy, and herbal elements as the 1990. It offers the classic Cabernet characteristics of smoky, toasty new oak intermingled with generous scents of black and red currants, and spice. It reveals great ripeness and richness of fruit, superb intensity, a jammy, intense, black-cherry component, and a long, structured, rich finish. There is a sweetness and expansiveness to the fruit that generally comes either from old vines or very low yields. Because of its structure and slow evolution, it will benefit from 2-3 years of cellaring; it will age well for 15+ years.Tel. (408) 741-5858
