Having spent 48 months in French oak barrels, the 2016 Cabernet Sauvignon Deep Time displays a deep garnet color, spilling out of the glass with evocative, entrancing notes of dried rose petals, molten licorice, dark chocolate, wild mushrooms and rare beef, over a crème de cassis and stewed plums core. The palate is full-bodied, exotic, rich and so, so plush, featuring beautifully balanced freshness and a very long, fragrant earth-laced finish. It is delicious and impressive right now, but it would also be incredible to watch this evolve over the next 25-30 years.
