The 2007 Cotes du Ventoux Nature, a wine made with no SO2. While such a decision can be dangerous, this offering seems remarkably stable. However, readers should keep in mind that these wines often do not stand up to shipping where they can be exposed to extremes of temperature. A blend of Mourvedre, Syrah, and Grenache, this 10,000-bottle cuvee reveals gorgeously pure strawberry and black cherry fruit along with hints of flowers, spice box, and Provencal herbs. Full-bodied, rich, elegant, and fresh, this delicious red should drink well for 2-4 years. Diners at southern Rhone restaurants should be on the lookout for it.
