The 2001 Cabernet Sauvignon Knight’s Valley reveals soft, round, chocolaty, cedary, herbal notes intermixed with copious quantities of black fruits. Winemaker Ed Sbragia and his assistant, Laurie Hook, told me that only 30% new oak was used in the wine’s upbringing. It is a complex, rich, sexy, full-throttle Cabernet Sauvignon that should continue to drink beautifully for another 4-5 years given its impeccable balance.
