Proprietor Warren Winiarski produces Cabernet Sauvignons of uncommon delicacy, complexity, and harmony. Although this property went into a slump from 1979-1983, there have been no misses since. If you cannot find any Cask 23 in the marketplace, or more likely, if you cannot afford it, look for the Stag's Leap Vineyard or Fay Vineyard Cabernet Sauvignons. In some vintages, such as 1991, even the Napa bottling is a super-impressive wine. Both the 1990 Stag's Leap Vineyard and 1990 Fay Vineyard Cabernet Sauvignons are outstanding wines. The 1990 Stag's Leap Cabernet possesses a stylish, elegant bouquet of subtle toasty, vanillin from new oak, black-cherries, anise, and herbs. The wine offers complex, rich, multi-dimensional flavors, with excellent extraction, low acidity, ripe fruit, and a medium to full-bodied finish. There is wonderful richness allied to an overall sense of elegance. Drink it over the next 10-12 years.
