I preferred the just bottled 2016 Bajondillo to the 2015, a similar blend of 85% Garnacha, 10% Syrah and 5% Cabernet Sauvignon matured for six months in a mixture of oak vats and tank before bottling. The style is very different form the 2015, more on the fruit, rounder and with more focus. The palate revealed some herbal notes and medium body. 95,000 bottles produced.

I had two vintages to compare of the entry-level red, including the 2015 Bajondillo, a blend of 85% Garnacha, 10% Syrah and 5% Cabernet Sauvignon from Méntrida. The varieties fermented separately in stainless steel vats with some 30% full clusters with indigenous yeasts. It matured for six months in oak vats and tank before bottling. It's quite ripe and a little blurry. The palate has some dry tannins and very ripe fruit. 85,250 bottles produced.

The 2014 Bajondillo is a blend of Garnacha with 10% Syrah and 5% Cabernet Sauvignon that fermented separately in stainless steel, with some 30% full clusters and indigenous yeasts. Malolactic is also in stainless steel, and the élevage lasts six months and is carried out in a combination of oak and stainless steel vats. This is an approachable, fruit-driven red blend combining the floral and red berry character of the Garnacha with the meaty tones of the Syrah, nicely balanced and fresh. The palate is medium-bodied, with fine tannins and balanced acidity. Fresh, approachable, easy to drink and quite good value. 80,000 bottles produced.

The 2013 Bajondillo is a blend of old-vine Garnacha and younger Syrah outside the boundaries of Gredos, aged for six months in oak barrels of different sizes. This is still very young and has some reductive notes when opened, so energetic decanting is a good idea. It has an earthy, slightly animal profile with notes of forest floor and hints of leather over the mixture of red berry fruit, but no noticeable oak. The palate is medium-bodied, with some grainy tannins and quite marked acidity. This would be better with food. 90,000 bottles produced.

A delicious blend of 65% Grenache and 35% Syrah aged six months in 500-liter French barrels and larger foudres, the stylish, cool-climate, high-altitude 2012 Bajondillo displays lots of strawberry, wild mountain briery, berry fruit, and hints of licorice, spring flowers and forest floor.
