A gorgeous nose of rowan, lime, white peach, almond, and walnut oil in the Billaud-Simon 2007 Chablis Les Clos leads into a succulently fruity, piquantly nutty, and distinctly chalky palate impression that lingers with focused persistence. Here we have amplitude impressively combined with primary juiciness, brightness and energy, as well as the promise of continued excellence over the course of the coming decade.
Bernard Billaud agreed this year to show me his young grand crus in advance of their anticipated May or June bottling, even though they were on their finings. In addition, I was able to have my first taste of his 2007 grand crus.
