The 2007 Touraine Sauvignon from Domaine de la Charmoise displays intensely citric and slightly grassy aromas and flavors, but its sheer palate density and lightly oily sense of textural richness keep it from going the rather strident way of too many of its fellow Touraine 2007s. A strong finish of bitter-sweet citrus oils, toasted nuts, sage and caraway leaves you plenty to chew on.
