The 2000 Cabernet Sauvignon was produced from 30-year old vines, aged in 100% new oak (70% French and 30% American), and bottled unfiltered. It totally conceals its lofty 15.5% alcohol. An opaque purple color accompanies the extraordinarily powerful nose of creme de cassis, tobacco leaf, licorice, and oak. This dense, full-bodied, concentrated Cabernet possesses sweet, moderately high tannin, intense black fruit characteristics, and a 35-second finish. A brilliant western Australian Cabernet Sauvignon, it should age for 15+ years. Anticipated maturity: 2005-2015.
