This vintage comes from the era when this wine was aged on the full lees, a process the winemaking team at Bastianich has since moved away from (going to a lighter lees protocol instead to keep more freshness in the wine). The 2007 Vespa Bianco reveals the winemaking concept of its time, with more softness, thickness and opulence. It is more generous and sweet, and is stylistically very different overall. The new method might be a better idea, but this is still a very nice wine to pair with baked cod or halibut.
