The 2008 Cava Gran Claustro is a blend of 43% Pinot Noir, 43% Chardonnay and 14% Parellada sourced from 40-year-old vines and spends 15 months in bottle before disgorgement with no added sugar. This is a traditionally made Cava that is riddled by hand. It has an agreeable, comparatively intense bouquet of bruised apple and light honeyed notes with hints of tangerine emerging with aeration. The palate has impressive weight for a Cava, with that honeyed trait continuing in the mouth married with fine acidity. It is harmonious and long, a Cava with substance and style. Drink now.
