This bottle of Sauzet's 2008 Puligny-Montrachet 1er Cru Les Folatières was aging with grace, offering up a complex bouquet of candied pineapple, mandarin orange, crisp yellow apple, drawn butter, wheat toast and oak vanillin. Medium to full-bodied, textural but incisive, it displays the racy spine of acidity as well as some of the lactic signatures that typify this white Burgundy vintage.
