The characterful and somewhat rustic 2016 The Flower And The Bee Sousón fermented in stainless steel and matured in 300- and 500-liter oak barrels for four months, but the oak is neatly folded into the wine and doesn't take a leading role. This shows better balance and more polished tannins than previous vintages, which makes it a lot more drinkable. It's tasty and somewhat earthy, and it should do well with food. 15,000 bottles were filled in July 2017.
