The 2007 L’Espill is made up of 60% Garnacha, 30% Carinena, and 10% Cabernet Sauvignon sourced from vines over 50 years of age. It was naturally fermented and then aged for 12 months in seasoned French oak. The aromatics are slightly restrained but with coaxing reveal notions of slate/mineral, sandalwood, spice box, and assorted black fruits. On the palate it is in need of greater depth and concentration although the flavors are very enjoyable. Give it 2-3 years of cellaring to hopefully allow for further development and drink it through 2019.
Celler Cecilio is the oldest registered winery in Priorat.
