The 2005 Edom is a Cabernet Sauvignon (75%) and Merlot (25%) blend. This was raised partly in French and partly in American oak barrels. It is bright, with ripe tannins providing grip on the palate. The structure is actually the wine’s best feature. There are herbaceous notes on the nose and the finish. The mid-palate is on the light side, but the wine has a rather elegant feel. Although this can be approached now, it would be better in a year. Drink now-2013.
